Choose only fresh, spicy radishes, roll them in salt, and then try to maintain a consistent flavor as much as possible through aging time without adding fermenting agents such as vinegar. Since dongchimi broth is mainly used to make cold noodle broth, people who are familiar with the taste of meat broth may feel that it doesn't suit their taste. The North Korean-style dish “fish-bok tray,” which is topped with plenty of pork, mushrooms, tofu, and vegetables, is also popular because you can enjoy the hot soup together. It is characterized by the fact that the soup is light and has a thick flavor. After eating the fishcake tray, you can also add soba noodles to the leftover broth and enjoy it like hot noodles.


Note that the noodle sari added to the fishcake tray is the same as the sari in Pyongyang cold noodles. The broth can be added at no additional cost.

“Busan Restaurant” is an ecological specialty store near the Insadong PR Center that has been working with artists since 1976. There are many exhibition halls and galleries nearby, so you can see posters about artists, exhibitions, and performances attached to the entrance.


Busan Restaurant's signature menu is “raw cod soup.” It is served in a spoon full of vegetables such as buttercup, bean sprouts, and tofu, and is full of raw cod, making it a hearty portion. The broth simmered with over 10 ingredients, including hwangtae head and ginger, is seasoned with shrimp sauce and has an excellent clear and refreshing flavor. The seasoning is not irritating, so it's also popular as a condiment. You can request offal with a rich texture and a savory flavor after the soup is boiled, but the additional cost is said to be 3,000 won. Freshly cooked, chewy rice is served when the stew is all cooked, but you can enjoy the warm taste when served with side dishes that grandmothers carelessly stirred up. Another popular menu item is “raw tofu,” which has an old-fashioned flavor.


It's a good idea to note that the store is old and the interior is not spacious, and it may take a while for food to be served during times when there are many customers. Note that the average stew takes about 15 to 20 minutes to boil, and it is difficult to order when all the ingredients are used up.

3. Always a hearty bowl, Jongno 'Lee Moon Seol Nongtang'

“Imunseol Farmhouse” in Jongno has a 100-year tradition. It is also a place designated as Seoul's future heritage in recognition of sharing the history of Jongno. This is a place where you can enjoy Seolleungtang cooked in a large pot seen from the open kitchen. I love the smell of meat that fills the store and the constant slicing of meat next to it.

The signature menu is “Seolleungtang.” It is served in the form of rice and noodles in an immaculate broth. The deep flavor and aroma that you feel as you eat the soup is appealing. Even though it's a meat broth, it's less greasy and has a light texture. Since neither kimchi nor seolleungtang contain any condiments, you can enjoy a refreshing and hearty meal. If you order “Special Seolleungtang,” it includes various parts of meat, and you can enjoy parts such as spleen, beef tongue, and head meat.

It is possible to eat a bowl of green onions, kimchi, and kakuteki separately on the table. Note that people who are accustomed to the surrounding Seolleungtang may feel a little bored. Note that the more times you eat it, the more you enjoy its rich flavor.

4. City Hall “Goryeo Samgyetang”, the originator of samgyetang

Korea's first samgyetang specialty store 'Goryeo Samgyetang' opened in 1960. It is a dish created by the founder Lee Sang-rim, who worked at Chicken Restaurant, considering that the taste and health improve when ginseng is added and boiled together. It started in Myeong-dong and has now expanded and moved its head office to Seosomun. Since they developed a menu for the first time in Korea, it is said that there are many similar brands, so be sure to check them out before visiting.


The signature menu is “samgyetang,” but many people are looking for the signature dish of Goryeo Samgyetang, “Ogol Gye-tang.” It is a place where the chicken is cooked faithfully according to the basic ingredients of samgyetang, and the chicken is so tender and moist that you can enjoy even the chewy breast part gently. The soup is clear, not greasy, and is characterized by a refreshing taste. The unique advantage of Goryeo Samgyetang is its light and non-irritating flavor rather than the thick, rich soup in the Korean style. If you make samgyetang, you serve one cup of ginseng liquor in a small glass, and you can drink it with your mouth before eating, and people who can't drink alcohol can take it while the soup is hot to remove the entrails of the chicken.


Note that wild ginseng can be added to the samgyetang and abalone samgyetang menus (6,000 won) to be enjoyed. It is said to be a popular store among Chinese people on their travel itineraries. Currently, with the exception of the main store, you can find branches all over Seoul, so it's a good idea to search for a store near you.

5. Seafood Kalguksu that started at 20 won in 1965, “Praise House” in Jongno

“Praise House” is a seafood kishimen noodle specialty store with a 50-year tradition located in Jongno 3-ga. It's a long-running collection that doesn't miss out on all aspects, such as taste, value for money, and friendliness, as I've covered it once in the TV programs that are being aired. They sell kishimen noodles and dumplings made with their own matured dough.

The 5,500 won “seafood kishimen noodles” and the kimchi filled in large brass bowls at every table are impressive. There are two types of kimchi available: moderately ripe kimchi and toppings, and many customers praise the kimchi flavor for soaking 25 bags of kimchi a day. Kalguksu noodles are pre-kneaded with flour and picked and used every time an order comes in. Kalguksu, which contains plenty of clams and mussels, has a rich flavor because the slightly thick noodles are mixed with the refreshing flavor of the seafood broth. It is also a delicacy to eat it sprinkled with the sauce or pepper that is on the table, depending on your taste. You can enjoy it even more if you eat it with “meat dumplings” made by hand.

The seats are not large, so they are often full, but the turnover rate is fast. Bar seats are also available for guests visiting alone. Since the noodles are removed from the machine as soon as the order is placed, it may take some time for the noodles to be served. The portion is substantial, but for those who don't have enough, please note that noodles can be refilled.
