205 restaurants from all over the country were selected for the âHundred Years Restaurantâ that connects generations. Following 58 last year, 147 more were designated this year. The 205 restaurants selected directly by the government are currently known through the food tech platform âShikigami.â Under the title âHundred Years Gourmet,â AJU Keizai will introduce the Hundred Years Restaurant and the food restaurants filled with memories one by one.

âYukgaejangâ is eaten by mixing seasoning with shredded beef and simmering it sharply with broth. The hot soup, which contains plenty of meat and vegetables, is perfect for melting a frozen body and mind during the cold winter months. âCheerful Restaurantâ, located in the alley of Daejeon Printing House, has been competing with a single menu at Yukgaejang since 1975 until now. Adhering to the recipe handed down by the aunt of the first CEO, who was the Suragan Sanggung of the Soon-jong king in the Joseon Dynasty, they are presenting an authentic court style yukgaejang.
The signature menu is âyukgaejang,â which is filled with green onions in an earthenware pot that is nicknamed pagaejang. Yukgaejang, which is made from a broth made by adding only two types of green onions and brisket to beef bone broth, is characterized by its light flavor without being spicy or irritating. By boiling green onions once in hot water, they removed the characteristic arine flavor of green onions and added an even more refreshing flavor. The combination of brisket, which is plentiful in the soup steeped in the sweet flavor of green onions, is excellent. Green onions and rice, which add a refreshing flavor to the soup, are offered as unlimited refills, so you can enjoy a more hearty meal. [Hundred Years PICK] âGungjung-sik Yukgaejangâ = Unlike popular yukgaejang, which contains various vegetables such as bracken, bean sprouts, taro, and sweet potato stalks, it is a dish made by cooking green onions and beef as the main ingredients.
