“Kigen” was opened by Korean chef Lee Jun-suk, who used to be a brother, and Japanese chef Ino Fumiaki. They present Kansai style sukiyaki using premium grade Korean beef from 1++ BMS (Beef Marbling Standard) 9up. The signature menu, “Special Korean Beef Sukiyaki Single Item,” cooks ingredients using Nambu ironware griddle, which has a history of over 400 years. At first, you can enjoy the umami by dipping Korean beef simmered on your own with brown sugar and kaeshi sauce in a gokgol egg. Next, cover vegetables such as tofu, green onions, bok choy, mushrooms, and Chinese cabbage with meat and cook without moisture. You can experience a rich flavor by adding eggs mixed with plenty of truffles to the moist ripe ingredients due to the moisture that comes from vegetables.

“Negisukiyaki” is the fifth brand operated by Negi Company after Gapponegi, Negi Dining Lounge, Sushi Ryuko, and Modern Oden. There are both Guanseo-style food, which is eaten stewed in sauce without broth, and Kwan-dong-style, where tomatoes are added to the soup to make the most of the refreshing flavor, so it's a great place to choose and enjoy whatever suits your taste.
