korean food / seoul / 5 restaurants with special parts of chicken cooked on charcoal – 2480

“Special part” refers to a part of meat that can only be obtained in small amounts from meat. There is a lot of interest in the special parts that come from chicken, beyond cows and pigs, which we usually like to eat. Nowadays, charcoal-grilled restaurants that specialize in special parts of chicken are popping up one after another, making me realize their popularity. “Charcoal-grilled dak-galbi,” an authentic dak-galbi dish in Chuncheon where a teppanyaki is placed on hot charcoal and grilled chicken like ribs, has recently become more popular than teppan dak-galbi, with various special cuts. In Japan, they enjoy “yakitori,” a skewer grilled over charcoal by sprinkling salt and soy sauce on top of the chicken, “tsukune (tsukune),” minced chicken baked in a round shape like a dumpling, and “kushiage,” where vegetables and meat are grilled and deep-fried on skewers.

Special parts of chicken include a variety of flavors, such as “neck meat,” which has a soft texture by applying bones from the chicken neck, to “cartilage,” which has an excellent chewy texture, “sand house” with an excellent chewy texture, “skin” that is full of savory flavor in the mouth, “heart” with a chewy texture and rich flavor, “tenderloin,” which is light and rich in fat, and “liver,” which is rich in fat, adding to the fun of choosing and eating. It's charcoal-grilled and has a delicious, chewy, and subtle flavor! Here are 5 of the best new restaurants that serve charcoal-grilled chicken with special parts of chicken.

“Koshun” is run by Chef Cheon Kwang-woong, who has a long experience in Japanese restaurants, such as “Romantei” in Sinsa-dong, “Gapporei” in Apgujeong, and “Ranjuku” in Samseong-dong. If you walk inside through Noren, which has a yellow chicken drawn on a red background, you will see an interior space with a luxurious atmosphere in black tones. The signature menu is “Omakase,” which consists of 2 types of appetizers, 6 types of yakitori, and a meal and dessert. In particular, yakitori, which is made by grilling the heart, wing, thigh, and breast of free-range chicken on bijangtan, is fun to enjoy the different textures and flavors of each part. The meat and offal are grilled over high heat with oak wood with smoked oil to give it a moist juiciness and rich flavor.

â–²Price: Omakase 58,000 won, Oto-shi (2 people) 5,000

â–²Testimonial (Shikigin): I tried omakase with chicken as the main ingredient for the first time, and it was amazing that such a variety of foods could be served. The chicken liver pate was also delicious, and the yakitori was perfect, not to mention. Also, a chicken burger was included, and the slightly spicy sauce went great with the fried chicken. hehe

2. Fresh chicken that you can choose and enjoy by part, “Hyogye” on Garosu-gil

“Hyogye” is a charcoal-grilled chicken specialty restaurant newly opened by “Kuishinbo,” which is well known as a yakitori restaurant. Every morning, they cook their own grilled chicken in a private brazier placed at each table. The signature menu is the “grilled chicken platter” where you can enjoy pork, thigh, shoulder, breast, and wings all at once. Skilled staff want to produce the best flavor by adjusting the temperature and time for each part to be enjoyed the most. The chicken cooked to a golden brown on top of the chicken is a perfect combination of crispy skin and juicy meat. I also like “thigh meat sauce,” which has a spicy and rich flavor, as opposed to lightly grilled meat with salt.

▲Opening hours: 17:00 — 01:00 every day, closed on Sundays

â–²Price: Assorted grilled chicken (400g) 24,000 won, thigh meat (200g) seasoning 13,000 won

â–²Testimonial (Shikigin Kaisersause): When I saw the raw chicken that came in a full tray, I could see that it was in good condition. Hehe, I don't like breast meat because it's usually thick, but this one is so soft that it's not like breast meat, so I ate it absolutely deliciously. The sour flavor of sammu filled with shiso leaves clears the mouth, so if you wrap the chicken and eat it, you won't feel it.

Head Chef Oh Jun-tak, from Hong Kong Yardbird, presents high-quality yakitori and grilled dishes at “Chop”. It is located on the 6th floor, which is the last floor of K Contemporary Art Museum, so you can spend a romantic time looking at the panoramic view of the city. The signature menu is “yakitori,” where fresh chicken brought in every morning is carefully grilled with domestic oak white charcoal. There are 16 different parts available, including neck, hip, chest, heart, neck tendons, tail, and inner leg, so it's fun to choose according to your preferences. Yakitori is rich in flavor by adding ingredients and sauces that enhance the flavor of each part, such as sesame leaves, raw wasabi, yuzu kosho, and umeboshi.

â–²Testimonial (Shoulder+_+): The terrace is open and the inside of the store is made of glass, so the view was very nice. There are many types of yakitori I've tried for the first time, so it was fun to try them all. Personally, I ordered one more time because it fits my hips and legs the best. Hehe, I ate the dish together, but I definitely recommend trying the grilled green onions and sandwich-style acidity, which are eaten one by one.

The “Octagonal Mokdong Main Store” stands out for its interior and exterior, which is decorated with wooden interior items and octagon-shaped interior items with an octagonal jeong motif. CEO Seong-wook wants to bring out the best flavor of meat using a cast iron grill developed by CEO Seong-wook himself after 3 years of research. The signature menu is “charcoal-grilled dak-galbi,” which has a gentle aroma of fire and moist gravy through a charcoal grill process. The dak-galbi, grilled once more on a coconut-charcoal grill, loses its greasiness and is even more light. There are three types of special parts that you can order after tasting dak-galbi, from soft “neck meat” to elastic “fillets” and “cartilage,” which is fun to chew, so you can choose and enjoy them according to your taste.

â–²Location: 266-1, Mokdong-dong-ro, Yangcheon-gu, Seoul

▲Business hours: 16:00 — 01:00 every day

â–²Price: Charcoal-grilled dak-galbi 9,900 won, 10 chicken necks 13,000 won

â–²Testimonial (Little Princess Shikigami 95): Meat is placed on a unique octagon-shaped grill with sauce on the side, so the space layout is nice. Hehe, the dak-galbi was delicious because it was tender, and I tried slicing my neck with a special part. It was seasoned with soy sauce, so it was a strangely appealing taste. I ordered crab ramen and miso hot pot as a meal, but the soup was very cool because of the whole crab. hehe

5. The fun of choosing according to your taste is amazing, Apgujeong's “Yakitori Pano”

Yakitori Pano opened a new yakitori specialty store near Apgujeong Cafe Alley in early September this year. The compact interior consists of bar seats that can seat about 8 people. When you sit down, you can watch the owner cook his own skewers in a lively way. They also sell easy-to-eat snacks and hearty meal menus, including 14 types of yakitori and 4 kinds of grilled vegetables. “Negima (leek thigh),” which has a sweet, ripe green onion that adds flavor to the tender meat, “tebanaka (wing),” which has a chewy flesh and savory flavor, and “nankotsu (cartilage),” which has a delightfully crunchy texture, is the most popular.

â–²Location: 13-5 Seolleung-ro 157-gil, Gangnam-gu, Seoul

▲Opening hours: 19:00 — 03:00 every day; Sunday 16:00 — 22:00; closed on Mondays

â–²Price: Negima (leek) 3,500 won, tebanaka (wings) 4,000 won

â–²Testimonial (I need to get out of work): I went there because I was hungry, and I think I had a huge meal. Hahahaha I usually like yakitori, but there are quite a few types of yakitori I've been to. As soon as I ate the most enjoyable Negima, I ordered 2 more. It seemed to bring out the unique texture of chicken, and I was able to enjoy the aroma of the fire, so I had a delicious meal and drink time.
