âPastaâ is a representative Italian food made by removing noodles from a dough made using flour and water. Pasta is divided into dried noodles called âsecca (secca)â and raw noodles called âfresca (fresca).â Unlike dried noodles, which are mass-produced for commercial purposes, raw noodles are made through traditional manual work. Fresh noodle pasta, which has a different flavor and texture depending on the ingredients and proportions of the dough, gives it something special. The characteristic of raw noodles is that they have a high moisture content, so they have a chewy texture, and the sauce penetrates well to the inside, making you feel a deeper flavor. Showcasing pasta from raw noodles made every morning can be more time-consuming and cumbersome than others, but I make it with just one passion for pasta. Here are 5 of the best fresh noodle pasta restaurants in the world of hearty, chewy noodles.

The signature menu is âbeef ragu and tomato,â made with tagliatelle noodles topped with ragu sauce and cheese. The chewy texture of tagliatelle is combined with the rich ragu sauce to give it a deep flavor. Ragu sauce contains a lot of beef, so it has a strong chewy flavor.
