A âstateless cuisine barâ where you can enjoy fusion cuisine that combines various nationalities rather than food from a specific country, such as Korean, Western, Chinese, and Japanese food, all in one place. Nationless restaurants that combine the advantages of Eastern and Western cuisines with a diverse list of alcoholic beverages to create different flavors are on the rise. Fresh sashimi, fruit, chimichurri sauce made with savory perilla oil, and bibim-myeon with rich crab sauce come together to create a unique flavor. Let's go out into a rich world of cuisine while tasting the nationless cuisine created by the chefs based on their long experience! Here are 5 of the best restaurants with no nationality, a ray of fresh light in a gray city.

âAstral Wine Bistroâ offers a diverse wine list of over 50 varieties, including sparkling, white, and red, and a creative combination of dishes. Chef Park Seung-joon, who is proud of his experience in Samseong-dong's Korean beef omakase 'Restaurant RIPE' and Haebangchon's natural wine bar 'Sate', is the head chef. The signature menu is âRaw Halibut with Green Chili Dressing,â where plums and peaches are placed on a thin layer of flounder sashimi and topped with hibiscus powder and green chili dressing to finish. The sweet and sour flavor of the green chili dressing enhances the taste buds, and the fresh fruit blends harmoniously with the light flounder sashimi. Inside the store, the chef's dessert shop âFinz Finzâ, who was in charge of sweets at the Michelin 2-star restaurant âMinglesâ, is operated as a shop-in-shop. As a dessert menu, I recommend âFINZ Signature,â which has a savory flavor made by adding cigarette, black sesame fry, and charcoal cream to Finz ice cream.

âGudulâ offers a Korean teppanyaki course meal by Chef Park Se-chan from the Korean bar 'Se-chan' located on Garosu-gil. A variety of alcoholic beverages are available, such as Korean traditional dishes and rice wine, sake, and spirits carefully selected by traditional sake sommeliers. The signature menu, âGudul 11 Dress Sang,â offers 11 different menus one after the other, consisting of mouthwatering, teppanyaki main dish, stir-fried rice, and dessert. The main teppanyaki teppanyaki âgochujang yakitori,â where grilled chicken is placed on top of grilled green onions and then served with gochujang sauce, is a popular menu. Chicken stands out for its juicy, juicy flesh in the chewy skin. Sweet, ripe green onions and spicy gochujang sauce enhance the overall umami of grilled chicken. Please note that ordering alcohol is mandatory.

The interior of the store is also white and has a clean and modern feel! It's not completely Korean food, but fusion Korean food, and every one of the menus is luxurious. The truffle crab omelette served as a teppanyaki dish and the teppanyaki gochujang grilled chicken were really delicious.

âOPNNGâ is a place where works of art by domestic artists, furniture from international designers, and skilled sommeliers gather under the concept of âa space that awakens taste.â Works by artist Kim Chang-yeol, artist Lee Woo-hwan, and artist Park Seo-bo hang all over the wall of the store, creating a gallery-like atmosphere. The signature dish is âabalone bibim-myeon,â a cold pasta made by putting kelp and radish on top of thin capellini noodles that are boiled immediately to order and made by slicing whole abalone. You can spread the crab sauce, rub the noodles and sauce thoroughly, then wrap them in the persimmon that comes with it and eat them. The rich flavor of the crab sauce made from abalone offal meets the bitterness of persimmon, and you can enjoy the deep flavor of the sea in your mouth.

I ordered the wine and abalone bibimbap recommended by the sommelier. I liked the texture of the chewy abalone and the soft capellini noodles! The crab sauce was soaked between the noodles, and the umami was amazing!

The main menu, octopus confit, came out with a whole octopus leg, and the amount was larger than I expected! Octopus legs tend to get tough if cooked incorrectly, but the crunchy outside and soft texture here were amazing! It also went great with the spicy sauce!

âPDRâ stands for Private Dining Room and is a dining sea with the concept of âa fun hideaway that only I want to know.â If you push the door, which is decorated like a shoe rack, to the side, you will find a U-shaped bar table and 2 rooms. You can enjoy food and a diverse wine collection from a three-Michelin star chef at an affordable price. The signature menu is âPORK CHEEKS & CHIMICURRI,â made with roasted pork cheeks and mushrooms flavored with perilla oil chimichurri sauce. As soon as the menu comes out, the savory flavor of perilla oil and the smoky aroma of pork smoked on rice straw stimulate the sense of smell. The fragrant perilla oil chimichurri sauce wraps around the chewy pork cheeks and enhances the rich aroma.
