Students in the 8090's who grew up with pizza, chicken, and hamburgers from a young age. This generation, which made adults worry about âWesternization of tastes,â are now Korean adults who naturally head to gukbap restaurants when choosing a meal.
This love for gukbap, which seems to be engraved in the DNA of Koreans, is so deep that it goes hand in hand with the beginning of Korean food culture. Soup is one of the essential dishes in Korean tangban culture, and rolling rice into the prepared soup and serving it as a meal was very popular because it was quick to cook and can be eaten in a hearty way. âJumak,â which was commonly seen in historical dramas, was the case, and the fact that the first food delivery in Korea was âHyo Jong-gangâ in Haejang soup also proves this fact.
Gukbap is a collective term for dishes made by rolling rice into a soup, and when it comes to gukbap, the typical examples are seolleungtang, which is made white using bones, or gomguk soup with a focus on clear meat. In addition, the range of applications is endless, such as pork gukbap, sundae soup, yukgaejang, hwangtae haejang soup, seonjitguk, oyster gukbap, and bean sprout gukbap.
This kind of gukbap is always popular regardless of the season, but in the cold winter, I miss the hot flavor even more. Chewy rice grains soaked in rich gukbap soup, delicious kimchi and kakuteki. This familiar feeling of temperature seems to comfort a tired mind and body. This week, let's comfort ourselves after all this year's hard work with a delicious gukbap meal.

1. 60-year-old crucible bath, Independence Gate âDaesung Houseâ
ham_ddara's Instagram
You can find Daesung House in about 5 minutes on foot from Independence Gate Station. It is a place that has been working as a crucible bath for over 60 years. In the past, when I was doing business in Seodaemun, it was a bit inconvenient due to the cramped interior, but I am grateful that I can park a few cars now. The crucible bath here contains plenty of crucible and suji, and is a separate gukbap style where rice is served separately. When you sit down, a sour sauce is prepared along with kimchi, kakuteki, and pickled garlic, and if you enjoy the chewy meat in the sauce and roll the rice in the soup, you can enjoy it until the end.
â²Location: 5 Sajik-ro, Jongno-gu, Seoul
â²Business hours: 10:00 to 20:00 (closes at 18:00 on Saturdays, closed on Sundays)
â²Price: Crucible bath 13,000 won, crucible bath (special) 17,000 won, beef 30,000 won
â²Testimonial (Shikigin Mir): The boss here is so kind that you can even refill the soup! Hahaha, that's why I only eat two bowls of soup every day lol
2. Seoul-style seonji haejang soup filled with fresh seonji, Yongsan 'Yongmun Haejang Guk'
jaerogba_'s Instagram
A place where there are no strangers in Yongsan. It is located near the Yongmun Market intersection. The parking is very convenient, and it is also famous as a knight restaurant. You have to go between 5 a.m. and 2 p.m., called the âfirst half of the morning,â to eat Haejang soup. Haejang soup, which contains beef bones, pork belly, and beef stew, was added a little bit of cheonggukjang to enhance the umami. The hot soup, which is not very spicy or salty and has just the right flavor, makes the stomach feel comfortable, as befits the name Haejang soup.
â²Location: 110 Hyochangwon-ro, Yongsan-gu, Seoul
â²Business hours: Morning class 05:00 to 14:00, afternoon class 17:00 to 23:00 (closed on the 2nd and 4th Mondays)
â²Price: Haejang soup 8,000 won, beef bone hot pot (medium) 28,000 won, assorted beef 48,000 won
â²Testimonial (Saudi Prince Shikigin): Yongmun Haejang Guk, one of the two places famous as Haejang soup in Yongmun-dong, sold out quickly, so I went there every time I had a chance, but failed again and again, and this time I succeeded! Sunji has a rich miso flavor and a pudding-like texture, making it very comfortable to eat. A place where the liver isn't that strong and has a heavy flavor
3. Korean beef gomguk soup with rich meat flavor, Yeoksam âIdo Gomguk soupâ
jiyoon_k_claire's Instagram
A gomdang restaurant located in a large food alley in Yeoksam-dong. The traditional interior seems to enhance the flavor of gomguk soup. Using Korean beef, we serve gomguk soup clearly, and the rice and spoon are served together in a brass bowl. It is characterized by being moderately seasoned and has a strong flavor. It contains plenty of meat that has been cooked well without any impurities, with herbal ingredients. Longtime regulars also enjoy the side menu, pollack sashimi, along with gomguk soup.
â²Location: 29-5, Nonhyeon-ro 94-gil, Gangnam-gu, Seoul
â²Business hours: 10:00 to 22:00 (Sunday 09:00 to 21:00)
â²Price: Gomguk soup 11,000 won, special gomguk soup 14,000 won, beef 48,000 won, pollock sashimi sauce 7,000 won
â²Review (Shikigami II Mersium II): A restaurant I want to eat again and again on cold winter days. It's close to the office, so it's a place I enjoy eating on my way home from work…
4. Jamsil's âYuwon Seolleungtangâ is the secret soup that has been sought by regulars for over 40 years
jangboseung's Instagram
A Seolleungtang restaurant with over 40 years of experience. The interior is not big, but the tables and chairs, which are full of old-fashioned feel, tell the story of time. Seolleungtang broth is boiled 24 hours a day, and the translucent soup has a refreshing flavor with a subtle flavor of meat. In a style where rice is rolled up together in a comfy style, a spoon is also inserted. Slightly ripe kimchi, which goes well with the Seolleungtang soup, adds a sour acidity. The soft, thin brisket is cut into thin slices and made with ingredients, and the quality is very high.
â²Location: 90 Samjeon-ro, Songpa-gu, Seoul
â²Business hours: 08:00 ~ 21:00 (B/T 14:30 ~ 15:00)
â²Price: Seolleungtang 9,000 won, crucible soup 15,000 won, beef 35,000 won
â²Testimonial (Bizarre Oden Fried Chicken): Seolleungtang is usually one of the foods I don't really look for because of the oily flavor hidden in its lightness, but Yuwon was worth eating because it fell relatively cleanly than other places. ~ On a rainy day the other day, I saw a fuzzy glass window in the Seolleungtang restaurant and went in unknowingly to take a bowl.
5. âWonjo Naju Gomtangâ in Banghwa-dong, a refreshing, deep, and rich soup
happy__hojin's Instagram
A place where you can enjoy clear najuku gomtang in close proximity to Seoul. There's a seating area and a table, so it's easy to pick and choose a seat. Stir-fried meat, which is close to simmered stew, is served as an appetizer, and the slightly spicy stir-fried meat is a great snack for customers who want to go with soup and accompaniment. It is served with green onions, egg paste, and sesame garnish on top of the transparent gomguk soup. When I rummage through the bowl, it contains hearty meat ingredients and plain rice. You can also ask for a separate meal when ordering, so it's a good idea to note.
â²Location: 10 Yangcheon-ro 14-gil, Gangseo-gu, Seoul
â²Business hours: 11:20 ~ 19:30 (B/T 13:30 ~ 16:00) Closed on Sundays
â²Price: Naju Gomguk 10,000 won, beef (small) 20,000 won
â²Testimonial (Yang Shikigami): The best, the best! Especially the red meat stew before it comes out! The downside is that you can only eat it at the store; it would be nice if you could pack it too tightly; I'll remember not being able to eat it when it's full term!! The meat is really tasty and the lean meat is soft
