Hwangseong Hot Squid Stew

When you hear the word “knight diner,” the first thing that comes to mind is a restaurant that sells food such as pork ribs or pork cutlets and has several taxis lined up in front of the store. Taxis are constantly coming in and out, and food is quickly arranged and delivered neatly on a stainless steel square tray at the same time as the order is placed… Also, I think of a bunch of things like the driver burning a cigarette outside the store with a sweet mixed coffee in a paper cup.

However, there is a place that shatters the idea of a “driver's restaurant = a restaurant for taxi drivers.” It's a restaurant located at a construction site or on the pier. Drivers who drive cargo trucks and navigators who drive ships also have to eat a meal, and there will be restaurants for them.

A restaurant located at a construction site is usually called a “hamba shop” and is responsible for meals for workers and truck drivers from as short as a few months to as long as several years. (Since hambajip is derived from Japanese, it is more correct to call it “construction site hall.”) Also, although there are in-house restaurants that are contracted on a multi-year basis in large harbors other than small docks, we usually go out to eat, just like we did when we were in school. As a result, small restaurants huddle around the harbor.

There are also several knight restaurants lined up in the alley leading from the Paradise Hotel in Incheon to Wolmido. It's about ten pieces. It's a sparsely populated area, so parking is easy due to lack of traffic, and since it's located in front of Incheon Pier 8, it's easy for port staff to get in and out. (Brother Restaurant, famous for its cast iron trucks, is also located here.) Most of them are shabby, so at first glance, there are places where you can't tell whether they opened their doors or closed a few years ago, but it's easy to see a lot of people coming and going.

The restaurant I'm going to introduce today has been operating here for 28 years, but unfortunately the main store closed its doors last month, and only welcomes customers at the Yonghyeon-dong branch, which has been operating as the second store since 4 years ago. Unlike before, the store is big and clean, but I can't help but smile when I see a part that exudes a unique feeling unique to the knight restaurant. The owner who started the store for the first time and his family continue to make food even now, so you can put aside your concerns about the taste.

The main store sells various types of stew along with pork ribs under the name “Hwangseong Knight Restaurant,” and the reason Egypt became famous was the squid stew made with squid. Squid is one of our favorite ingredients, but it's hard to find a restaurant where you can find it as the main character of stew. Therefore, one of the interesting points is that you can't predict the flavor of the stew.

When you visit a restaurant, jjigae quickly appears along with a yangpoon that you can grate and eat like any other knight's restaurant. It contains squid, garland beetroot, bean sprouts, cabbage, and tofu. However, the shape is a bit strange, and the soup is a bit faint (?) Do it. As soon as I was wondering if the delicious flavor of the stew would come out, the boss showed up with a tray filled with an unidentified can and said, “Spicy? Normal? ' and asks.

In the case of restaurants that usually ask about how spicy they are, there is a high chance that you will experience hell if you choose “spicy.” Having this kind of experience often, I am frightened by this question and timidly say, “Normal.” Then add 2 spoons of minced garlic and gently sprinkle finely ground red pepper powder and black pepper, and it suddenly disappears. When I see the red pepper powder sprinkled on it, I think the color of the soup will come out right now. Now all that's left to do is wait.

When the stew boils while making a bobbing sound, reduce the heat to an appropriate level and prepare to eat in earnest. Taste a cutlery that is slightly smaller than a cold noodle bowl and larger than a soup bowl by putting plenty of stew on it. Along with the sharp flavor of the soup, the sweet, spicy, and refreshing flavor unique to squid is intense. It's delicious!
There is plenty of squid in the stew, and frozen instead of raw fish is used. It was a bit disappointing for me, who was expecting the chewy flavor of biological squid. Because the amount of squid they digest in a day is large, they buy them in bulk, store them in their own freezer, and then use them, but even though I understand it, I can't hide the regret of taking a peek.
Nevertheless, the reason I visit this place is because of this refreshing soup that relaxes the stomach. Taste the rice separately from the stew little by little, then roll the rice into the stew and rub it gently. When the saltiness is mixed with the rice, it becomes the right seasoning. The stew is delicious, so I don't often get my hands on side dishes. However, the spiciness was just right for me, but my companion would like to eat something a little spicier than this. It's a method of adjusting the spiciness by adding more condiments, so if it's difficult to measure the spiciness, you can order “normal” at first and add more seasoning if it's not enough. It can be adjusted to the extent that sweat forms on the forehead.
In addition to squid stew, this place also has mixed stew made with pork and eaten together, but it contains meat and has a slightly more savory soup flavor than squid stew. If you want a refreshing soup flavor, you can choose squid stew; if you want a rich and rich soup flavor, you can choose mixed stew.

When I rolled up all the rice and ate it, my stomach was so hungry that I put down the cutlery, but when I looked around, they also ate ramen sari or stir-fried rice with leftover condiments. Thought it was amazing, I knocked a cup of coffee from the vending machine and left the store. A place that reminds me of a rainy day or a day when I want to go to sea.
