Knight Restaurant Road
Episode 15

After a week like a war that seemed like it would never end, and when the weekend morning dawned, I was obsessed with slugs. On my stomach, my belly button clock sounds like an alarm, but I just cheat because I don't want to do anything other than roll my eyes. At first glance, it reminds me of a phrase I heard on TV.
âI don't want to do anything. I'm not doing anything already, but I want to do nothing more violently and aggressively… '
I'm in a position where I have to prepare a homemade meal, so when it's time to eat, I can't miss the meal my mother brought me that much. I want to eat rice like rice, but I'm tired of delivery food. Imagine eating freshly cooked, hot rice mixed with the creature and topping it with herbs that smell of sesame oil. Whoa whooping.. The alarm in my stomach is loud.
Taxi drivers who drive taxis all day around the city also come to eat. I faced many chauffeurs while making Kite Diner Road, and they chose meals as their common complaint. Compared to rising food prices, the number of taxi customers has decreased a lot, so meals over 6,000 won are burdensome, and it is difficult to go all over the place even if you want to try a different menu every day. At that time, the best place is a knight restaurant that sells a variety of menus. I think it's a place like a taxi driver's gimbap heaven.
Today, I visited a knight restaurant in Bucheon that offers a variety of menus at reasonable prices, such as stir-fried pork, stir-fried squid, budae stew, and fried chicken soup.
There are five or six knight restaurants lined up in the Alley of Buheung Middle School near Shun-dong Station in Bucheon. It is said that the area around here formed a knight restaurant village about 10 years ago. This alley is almost occupied by driver restaurants, so when it's time to eat, it's full of cars not only by taxi drivers but also by residents who have come to eat.
All of the restaurants here sell a variety of menus at low prices of 5,000 won to 6,000 won. Among them, the restaurant you'll go to today is âHwapyeong Knight Restaurant,â a hot restaurant that just opened a year after opening.

My first impression of Hwapyeong Knight Restaurant was its friendliness. There are menus written in a nostalgic font on the blackboard, and even a simple menu made by applying a unique design to A4 paper. Even if you look at it at a glance, it boasts a diverse menu. If you order sundubu to go with stir-fried meat and sharp soup, which is the flower of the knight restaurant, and wait for a while, the food will be ready soon. It is a rice made by mixing freshly made side dishes and yellow rice. I am very pleased with this kind of consideration.
Even at home, I don't necessarily cook rice with white rice; I cook rice by mixing brown rice, barley, black rice, soybeans, and oats. If you scoop up a spoonful of rice, put it in your mouth, and chew well water, the grains pop up very well, and have a very nice texture. You may think that it's a bit frizzy to eat, or that digestion is not good, but as you eat, you get used to it again. In my case, chewing in my mouth for a long time made digestion easier than when I ate less than a hundred.
Let's go back to the restaurant story and enjoy sundubu. It contains familiar sundubu tofu and a few clams that are very well seasoned. Sometimes, in the stew of a restaurant that sells such a variety of menus, there is often a Buddha incident where you run into clams that are less salty and ruin a fun meal, but I was very fortunate that this is not the case here. The broth is not thick and the taste is rather plain. When you imagine sundubu jjjigae in soup, it's a flavor that everyone can think of.

I was curious about what led the owner of this place to start a knight restaurant. When I asked, I heard a somewhat vain answer, âI just took a seat here.â The boss said that he came across this place because he had been looking for while working in a restaurant. It was a restaurant that started that way, but it is said that they kept prices low due to âintense competition.â Despite the low price, the advantage is that almost all ingredients are domestically produced.
However, this place welcomes customers from 9 o'clock in the morning, which is a bit late for a knight restaurant.
âI make side dishes every day, and I start preparing them at 6:30 a.m., and since 2 people are preparing the ingredients, the restaurant can only open at that time. The restaurant makes all the side dishes, from side dishes to kimchi.â
The side dishes that are carefully prepared every day at the restaurant vary depending on the ingredients of the day, but today I had a side dish that was perfect for my taste. The dried seaweed sauce was salty and full of the scent of the sea. I will reveal a tip for pickling dried vegetables that was secretly passed on to me by the boss.
[Tips for pickling dried vegetables at Hwapyeong Kiki Diner]
Dried seaweed, which is sold in a square shape, can be crushed by hand and seasoned with soy sauce, garlic, sesame oil, and starch syrup. If water gets in at this time, the blue color will fade, so be careful not to touch it. After a while of seasoning, it naturally has a fresh flavor. If you put it in rice and grate it, there won't be any rice thieves.
Another dish I tasted at Hwapyeong Kisa Diner was stir-fried pork, which reduced the sweetness and used a salty, savory seasoning. It was perfect as a side dish for rice because the seasoning was well soaked into the pork, which was clean without any residue. When I asked about the secret recipe to make at home, I was somewhat disappointed to sort it out with one word, âall kinds of condiments.â

You can also scrape the seasoning and roll it up on rice.
When I was hungry, I only saw rows of knight restaurants, but when I came out full of food, I could see the surrounding scenery. The fresh colors of the trees lining the quiet, stretched alley make me feel good. It's nice to take a walk while picking up coffee from the coffee vending machine in the restaurant and digesting it. It's not a flavor you can find far away on purpose, and if you live nearby, it's a great place to pick up a 5,000 won meal when you think of a meal at home.
