Ginza Bairin is a Korean branch of a historic pork cutlet restaurant that opened in 1927 in Ginza,
Japan. It opened in Sagan-dong, Jongno-gu, in 20111 and offers authentic Japanese pork cutlets.
Ginza Bairin uses black pork from Jeju, and
grade 1 Jeju black pork is aged for 2 to 3 days and deep-fried with only the skin removed.
In particular, black pork has a low fat content, so it has a delicious texture even when eaten with oil,
so Ginza Bairin is delicious even when the oil is delicious, and it's not sticky, so it has a great chewy texture.
